What to know
Izuu's saba sugata-sushi is not Edomae sushi. The mackerel is cured, wrapped in kelp, and designed to deepen as the fish, rice, and kombu rest together.
Start small
Four pieces are enough for most first visits. The shop also offers mixed plates, sea bream sushi, conger eel, and seasonal hamo.
The main shop has a simple seated eating area rather than a long formal counter experience. It works well before an evening walk through Gion, and takeaway can be prepared for a later train journey.
